Myra’s New York Style Low-Carb Cheesecake
Ingredients
Crust:
- 1 1/4 cups finely ground almonds
- OR
- 1 1/4 cups finely ground cashews
- Splenda (loose bag) 1 tblsp
- 6 tablespoons butter, melted
Topping:
- 2 cups sour cream (16oz. container)
- 1 tsp vanilla extract
- Splenda (loose bag) 1 tblsp
Filling:
- 3 packages (8oz. each) cream cheese, softened
- Splenda (loose bag) 1 cup
- 4 eggs
- 1 tsp vanilla
Instructions
In a bowl, combine the almonds (or cashews), 1 tblsp Splenda and melted butter until combined. Press into bottom of a 9-inch spring form pan. Chill in refrigerator at least 15 minutes. In a bowl, mix the sour cream, 1 tsp vanilla and 1 tblsp Splenda until well combined. Cover and refrigerate. In a large bowl, beat the cream cheese and 1 cup Splenda until fluffy. Add the eggs, one at a time, blending well after each addition. Blend in 1 tsp vanilla.
Pour the cream cheese mixture over the nut crust in the spring form pan and bake at 350 degrees for 50 minutes or until a knife inserted halfway between the edge on center comes out clean. With a spatula, spread the sour cream mixture over the top, making sure you reach to the edges of the pan. Return cake to the oven and bake an additional 5 minutes. Remove cake from oven, allow to cool to room-temperature (cake will settle in the pan). Slide a knife around the edge of the cake to loosen it, then removed the spring form ring. Chill in the refrigerator.
Makes 16 servings, about 5 grams of carbs per serving if made with almonds, and 7.2 grams per serving if made with cashews.
Bonus:
For chocolate swirl cheesecake, melt 4 cubes unsweetened chocolate and 1 tbsp butter. Add 1 tbsp Splenda. Pour over uncooked cheesecake and swirl with a toothpick. Bake like previous directions, adding sour cream topping as specified.
Enjoy!!! It’s FABULOUS!! (Oh! And put the spring form pan over a cookie sheet. The butter in the crust melts out around the spring form and will make a smoking mess if you don’t!)
